Pizza Friday Goat Cheese Pizza
Oh, hi again!  Do you like the title for this post or do you think it’s weird?  If it’s the latter, just give this pizza a try and I think you’ll understand.

You may be looking at my pizza picture above and thinking it looks pretty similar to Pizza Friday a few weeks ago where we had White Pizza. It is similar, but if possible, even more awesome. Because it has goat cheese my friends. Goat. Cheese. Fresh farmer’s market goat cheese. Can you tell I looove it, just a little? I was looking for a recipe to use up what was left of my goat cheese and honestly, there were so many delicious looking recipes that I couldn’t decide on one. So I combined a few of my favorite things and came out with this winning combo of goat cheese, roasted grape tomatoes, spinach, and caramelized onions. And goat cheese.

I kid you not, my daughter nearly knocked over everything on the kitchen table to battle me for the last piece. If you don’t like goat cheese, well then I’m not sure why you’re still reading this 🙂

Ingredients:

*As always my pizza topping measurements are approximate.  It’s Friday, I don’t wanna measure!

  • Pizza dough/crust (I used the Pillsbury pizza crust found in the refrigerated section of the grocery store)
  • 3 oz. goat cheese
  • 1/2 cup baby spinach
  • 1/2 cup grape tomatoes
  • 1/4 cup sliced white onion
  • 2 T olive oil
  • 1/2 T coconut oil
  • 3 T milk
Instructions:
  1. Pre-heat oven to 400 degrees.
  2. Combine grape tomatoes and 1 T olive oil in a bowl.
  3. Spread grape tomatoes on a parchment paper lined cookie sheet.
  4. Roast for about 15 minutes, checking and rotating halfway through cooking.
  5. While the tomatoes are roasting, chop up your onions.
  6. Heat 1/2 T coconut oil in a small skillet and add the onions.
  7. Cook for about 10 minutes or until onions are soft and lightly browned
  8. Add baby spinach and cook until slightly wilted (about 1 minute).
  9. Once the tomatoes are done, turn the oven up to 425 degrees.
  10. Spread a thin layer of olive oil around the crust of the pizza.
  11. *Pre-bake pizza dough for about 7 minutes (this depends on what type of dough/crust you are using).
  12. While the pizza is pre-baking, mix together the goat cheese and milk until most of the lumps are gone.
  13. Spread goat cheese over the entire pizza and follow with spinach, tomatoes, and onions.
  14. Return to oven and cook for about 5 more minutes

This may seem like a lot of steps, but if you do them simultaneously, it’s really not that much.  Chop up and cook the onions and spinach while the tomatoes are roasting.  Mix the goat cheese and milk while the crust is pre-baking.  Always multi-tasking right?!

I would definitely recommend eating this while it’s hot.  Not that any of us like to eat our dinner’s cold, but my husband had to eat a little later than us and it definitely wasn’t as amazing as it was straight out of the oven. And I know because that was my third helping.  icon-thumbs-o-up

      I used the refined coconut oil just to grease the pan for the onions. The refined doesn’t have a coconut taste…not sure how that would be with this pizza! Thanks for reading, have a great weekend!
