Quick And Easy Greek Style Quesadillas

Greek Style QuesadillasI love quesadilla night in my house for many reasons. The first being that I can sneak different veggies in and my “no green stuff” 4 year old will not be the wiser. Usually. Sometimes she catches a glimpse of green and immediately pulls it out, but you just gotta keep trying with these picky little (adorable) creatures.

Quesadillas are also a great meal because there are always different combinations of foods that you can use, making it a great throw together meal.  BBQ chicken is always a hit around here as well as any combination of eggs and whatever vegetables we need to use up. I had some spinach that needed to be used so I decided to make my version of a Greek style quesadilla. Add it to some chicken, grape tomatoes, and feta cheese and you’ve got yourself a delicious meal. I love feta here, but mozzarella would work as well.

Imagine my surprise when my daughter gobbled these things up. I just stared, waiting for her to pull her usual “I want something else routine” but lo and behold, she ate two (large) quesadillas and didn’t spit a thing out! Of course I had to act like I wasn’t super excited that she ate them, otherwise there was a good chance it wouldn’t happen again.  Just a little reverse psychology 🙂

Just a warning that I really didn’t do much measuring with this meal. That’s part of the fun of a throw together meal right? I’ll try to give you some close approximations, but adjust accordingly.

Ingredients:
  • 2 chicken breasts, cubed
  • 1/2 cup baby spinach
  • 1/2 cup grape tomatoes, halved
  • 3 large tortillas
  • 1 T refined coconut oil (I used the refined here so that the chicken does not taste like coconut. Feel free to use whatever type of oil you prefer).
  • Garlic powder
  • Black pepper
Instructions:
  1. Heat 1/2 T coconut oil in skillet.Greek Style Quesadillas
  2. Season chicken with garlic powder and black pepper.
  3. Add cubed chicken to skillet and cook over medium heat until cooked through.
  4. Grease griddle with 1/2 T coconut oil and heat to 350 degrees.
  5. Fill one half of the tortillas with spinach, cooked chicken, tomatoes, and feta cheese and fold in half.Greek Style Quesadillas
  6. Cook until the bottom of the tortilla is nicely browned and crisped.
  7. Flip and do the same for the other side.
  8. Remove from griddle and cut into squares (I use my pizza cutter to do this).
  9. Serve while warm.

Enjoy an easy meal that everyone will love.  The combinations of foods to use here are limitless, I would love to hear what your favorites are!

 icon-thumb-tack Quick tip: This is a great meal to do the prep work ahead of time.  Pre-cut your veggies, use leftover chicken or cook it earlier in the day, and then just throw it all in the tortilla at dinner time!
